Ellies Dream Day in The Kitchen with Mark Greenaway

Little Ellie Monaghan was diagnosed last year with leukemia and her passion is cooking. Ellies Dream was to cook a Thank You meal for Les Hoey MBE for the things his DreamMaker Foundation has done to cheer her up during this horrendous time.
Award winning Scottish Chef Mark Greenaway heard about Ellie and invited her along to his Amazing Restaurant In Edinburgh this week and made her Dream come True.
When Ellie arrived at The Restaurant Mark presented her with her own mini chef whites and apron to match his own which made her squeal with delight.
Together the 9 year old and Mark headed to the kitchen and prepared and cooked a 3 course meal fit for a King (or an MBE)
Starter
Confit of Smoked Salmon
Smoked Mayonaisse, Compressed Cucumber, beetroot Pickled Onions, Dill Cream.
Main
Roasted Gartmorn Farm Duck Breast
Confit Duck, Duck fat Chips, Red cabbage, Salsify, fig Puree, Tarragon Jus.
Dessert
Frozen Rhubard Mouse
Ginger and Hibiscus Jelly, Pressed Candy Floss, Popcorn Toffee, Ameretti, Meringue.
Les said it was the best meal he had ever had and was made even better by seeing the huge smile on Ellies face the whole time.
We then took Ellie into Edinburgh on a shopping trip where she visited all her favourite shops and picked outfits, shoes, jewellery and even a furry mobile phone case. Ellie said she felt like a star. The day ended with a trip to Build a Bear where Ellie made a superhero bear for both herself and one for Les to keep in The Dreammaker Office to remind them both of the amazing day they had.

As the day came to an end a tired but very happy Ellie said " This is the Best Day of my Life"
